Low Carb/Gluten Free Mastro’s Warm Butter Cake
This blog actually started long, long ago……
Last year at this time. The Husfriend’s company took us to Mastro’s Ocean Club in Newport Beach, CA. We ate until our we reached maximum capacity and then it was time for dessert. I didn’t know how I was going to fit another bite in to my gob. Luckily, I wore a very stretchy jumpsuit. But, I digress, dessert.
Warm Butter Cake.
It’s famous. It’s awesome. It’s worth just going in for cocktails and cake!
It’s hard to describe the how amazing this cake is. It’s unctuous, crispy around the edges and not too sweet. It’s one of the most perfect cakes, ever. It’s served with a scoop of vanilla ice cream. No need for frosting.
I dream about this cake. I yearn for this cake.
….but I just started Low Carb.
Cake usually isn’t on the menu.
After, much calculations I’ve figured out how to get a similar cake.. this version is more pound cake, then butter cake. It still has the buttery aspect that I love about the Mastro’s. I’ve been in Albuquerque visiting with my folks. They love being my cooking guinea pigs. My mother calls this version, “The best cake I’ve ever had.” And she does not like cake. My dad even praised it, and he’s hard to please. My parents ate 1/2 the cake the night I made it.
This version uses coconut flour. Most know that coconut flour has a lot of fiber. 🙂
Recipe:
Everything at Room Temperature
Cake:
1 cup butter
3 eggs
1/4 sugar
3/4 cup splenda
3/4 cup coconut flour
1/2 teaspoon salt
1/2 teaspoon baking powder
4 oz cream cheese
1 teaspoon vanilla
Cream cheese layer:
4 oz cream cheese
1 egg
1/3 cup Splenda
1 teaspoon vanilla
Preheat oven to 325.
Spray/Crisco 4 mini springform pans -OR- A Bundt Pan.
1.) Prepare the cake batter: In a stand mixer cream butter, cream cheese, Splenda and sugar for 1-2 minutes. Add vanilla.
2.) Add eggs one at a time and beat on low for 20 seconds after each addition.
3.) Sift coconut flour, baking powder and salt, then add to creamed mixture. Beat on low until just incorporated, making sure not to over beat. Place into clean bowl. Keep away from heat. It doesn’t look like your normal cake batter. It’s fluffier and more solid-ish. This will make sense when you make it.
4.) Prepare the cream cheese layer: In a stand mixer (no need to scrub clean from the batter) whip together cream cheese and Splenda until creamed and smooth and luscious, add egg and vanilla extract.
5.) Pour cake batter into prepared springform pans of a bundt pan then top with a layer of the cream cheese mixture. (I like to have the layer of cream cheese mixture in the middle. I have to try it this way. Your call.)
6.) Bake for about 50-60 minutes, or until edges are golden brown and a toothpick comes out clean when inserted into the center of the cakes.
7.) When done take out of the oven, cool.
8.) If you want microwave for a few seconds before eating, do so. Serve with whipped cream, ice cream, or fruit.

Cute Advanced Revival Nail Polish Remover–
These are single use packages. There are nourishing. Maybe a little too nourishing. The smell was pleasant. I got 4 nails of polish off and then it seemed a little too oily to remove any other fingers. Perhaps, I’ll the non revival type! @CutexNails @Influenster #SoCutex #HealthyNails #contest.
Pantene Intense Hydration Shampoo and Conditioner–
This I love. I’m in the desert of Albuquerque right now. My hair has been screaming for moisture and this showed up. It’s like the Hair Fairies KNEW!! It smells like a fancy tropical vacation! YUM! I would re-purchase.
Dickinson’s Hydrating Toner–
Another great product. This is non stripping and refreshing and cooling.. and removers that last bit of leftover makeup. Bonus: I’ve wanted to try this. And now I have a bottle of it! Score! Years ago, I used plain witch hazel on my face. My mom and I like the smell. This has the addition of a slight natural fresh almost floral scent. It’s nice. Another item I’d repurchase.
Always Radiant Flex Foam Pads-
I’ve used this kind of product for years. Most of us females have. So, Id on’t need to get it into it. I’ll just say White Pant Approved.
Sinful Colors Kylie Porcelain Finish Nail Polish in Glazy Sunday–
I love this color! Just not the finish. If you do not have perfect nails, as in smooth as glass.. every bump and ridge will show. The formula is good for a matte polish, too. I just don’t have perfect nails at the moment. (I had a gel manicure in England a few weeks ago and they ground my actual nail.) I have tried a few of the Kylie Sinful polishes though. LOVE.
Downy Fresh Protect-
I’m a fan of these pebbly, waxy laundry add-ins. I use them as air freshner (Keep them in a dish). I’ve thrown them in the toilet to freshen it up. You can even make your own Febreeze type spray using this. And I’ve used them in the wash. I’m a fan and will repurchase.

NEW PRODUCT: Farmacy’s Honey Savior Salve

Let me explain…. No, there is too much. Let me sum up.

I’ve met some awesome people. This one time, I can tell you who I met.
Mark Veeder of Farmacy.
My husfriend’s company had the TSV (Today’s Special Value) and I had spent almost 24 hours at QVC. I saw that Mark was going to be on that night. I wanted to tell him how much I love the Brightening Coconut Gel Mask that we got in June’s Boxycharm.

That’s some serious stuff right there.
And Mark and the Farmacy Team are serious about natural skin care.
This salve really *does* soothe angry skin, be it from bug bites, hives or extra dry skin. There are oodles of great stuff packed into this salve. We know about the honey. In addition it contains royal jelly, propolis and natural oils.
I’ve been using it for the last few weeks. All over. Hands, cuticles, arms, legs… and FEET! It’s dry here in New Mexico and my poor hooves haven’t been very pretty this summer until I used this. It’s not one of those lotions/creams that you apply and then minutes later you have to re-apply. It also make a big visual change in dry skin. My heels no longer look cracked and dry.. and they don’t feel cracked and dry!
It absorbs into the skin. Doesn’t leave skin greasy. Just healthy looking and feeling.
It smells like warm honey, but it slowly dissipates. My mom said, “I want to eat it.”
On the nerd side of things.. I’m pretty sure the concoction that Cassandra from Dr. Who was sprayed with? Was made from this salve. Moisturize Me, Moisture Me!
You know that I’m also a packaging junkie. There was some time and thought put into the box and sleeve decide. The box has a honeycomb print all over the outside. Inside tells you about the company and it’s mission to meld nature and science for better skin. The actual tube is metal, you the kind that actual will stay rolled when you use up the product. the cap is uber awesome, it’s wood! Also, it’s made in the USA.
Having strange sensitive skin that has reacted beautifully to the two products that I have tried from Farmacy makes me want to try even more from this company.

April 2016 Boxycharm
Hello My Fellow Goo Hoarders!
I had filmed my unboxing. There were lipstick smudges, worn out foundation and I had left the bathroom door open. So, I decided to go old school blog style!
I lurve Boxycharm. Five full sized products for $21, how can you lose?
Let’s get this started.
First product:
Pur-lisse Day Lip Nourisher- It has Mango and Shea butter, but no petroleum. It’s smooth, light and moisturizing. Other happy ingredients are Jojoba, Rice Bran Oil and Vitamin E. Not sticky at all. I’m a fan of Pur-lisse, I love getting their products in my subscription boxes.
Second product:
Ora Long Lasting Liquid Lipstick in Pasadena- This is my favorite color from this line. I bought it months again. It’s a rosy-brown nude shade. Perfect color for any look. The formula is mousse-y and comfortable. Dries matte. Love this liquid lip!
Third product:
Your Minerals Eye Pigment Shadow in Brown Hypnotic: Such a pretty shimmery brown taupe shade. This formula is smooth and silky, as well! It has the sweetest pink flash of tiny glitter.
Four product:
blinc Black Lash Primer.It’s BLACK and smooth! I’ve wanted a black lash primer for a bit know. The formula is smooth and goes on like a dream. Also adds oodles of volume. This products also reportedly helps your lashed grow with use over time.
Fifth product:
Anderson Lilley Beach Butter Hand Cream in Manhattan Beach. I love the texture and feel of this hand cream. Uber Thick and Moisturizing. Fast drying and not sticky. I’m not a big fan of the scent, but y’all know I don’t like scented hand creams.
